Kaede specializes in miso ramen just like the original shop Hanamichi in Nakano, so now you can have delicious Sapporo-style ramen in Ogikubo. Sapporo-style miso ramen has both soup and sauce cooked over a fire in a wok. First, miso is scorched in the wok, and then the soup and oil are mixed, so it is quite fragrant. Also together with pork bones and chicken bones, the soup is quite rich. The firm Sapporo noodles are actually the real deal from Sapporo. A ten-minute walk from the north exit of JR and Tokyo Metro Ogikubo Station, ten seats are available. Miso ramen is 800 yen. A large ramen serving is available for an extra 100 yen, and an extra big bowl of ramen is 950 yen. Optional toppings include negi (sliced long onion), salty-simmered bamboo shoots, seasoned egg and others.
