Ultra-Refined Ogikubo Ramen and Tsukemen

Uchoku (迂直) opened in December of 2018 and has been one of Ogikubo’s most well-regarded shops since. The master was inspired by the recent boom in ultra-refined styles of ramen with lighter soups made from specially sourced ingredients. They specialize in tsukemen (dipping noodles) with the noodles served in a kombu seaweed broth. Noodles are dipped into a separate soup made from katsuo (skipjack tuna).
The bowl to order here is the “katsuo kombu dashi shoyu tsukemen” (900 yen). Try the noodles without any soup to savor the amount of umami in the kombu soup. After that, start dipping in the rich soy flavored soup. Finally, when the noodles are gone, pour the remaining liquid from each of the bowls together and drink it all.
The shop serves ramen as well as a spicy tantan tsukemen, all of which are popular with their regular customers.
Keep in mind that the lineup for this lunch-only shop starts well before they open, and once a handful of people are in line, the queue moves a block away so as not to block other shops in this quiet residential neighborhood.
