Your Choice: Shamo or Niboshi, or a Mix!

The menu at RAGE in Nishi-Ogikubo is pretty simple: choose “Shamo” (Tokyo-raised game fowl) or “Niboshi” (three kinds of dried fish). The owner carefully selects six kinds of soy sauce and blends them to create a distinctive sauce for the soup. Opt for the signature ramen,”Shamo Soba” with noodles, special ham (called “kinka” ham) and a flavorful broth, which is made from the whole shamo chicken, konbu (kelp), and his original sauce added. “Niboshi Soba” ramen with niboshi broth gives you a surprisingly deep flavor. Finally “Maze-Soba” provides the ultimate mix of both shamo and niboshi, however the amount of broth is reduced to make way for all the ingredients. As a side dish a small bowl of seasoned rice is also available. Additional toppings of seasoned egg (100 yen) and chashu pork (200 yen) are also available for your ramen choice. Children are welcome and a covered bike parking area is a convenient plus for cyclists.
