Authentic Tokyo-Style Ramen

Taiyo Ramen in Koenji is famous for the soy sauce based light niboshi (dried sardine) soup. The owner carefully selects several kinds of dried sardines from different parts of Japan and blends them to make delicious broth! It has no obvious fishy smell but a hint of bitterness, which gives some kick to the ramen! The sauce is minimally added to the soup in order not to spoil the deeply flavored broth. The wavy noodles go wonderfully well with soup. Regular ramen with a relatively big portion of noodles (180g) is quite satisfactory, but you can ask for a small portion if you want a lighter meal (the price remains the same, though) or add some extra noodles (+70 yen). Set menus are available. Don’t miss a wide variety of side dishes including large gyoza dumplings and stir-fried seasoned rice! Toppings such as seasoned egg, chashu (sliced braised pork), sliced leeks, and raw egg are available for ramen.
